LOVE MY KRAFT FOODS MAGAZINE

I have to share this very yummy recipe that was in my Kraft Foods magazine. It was sooo YUMMY that I thought it was worth passing on to others. I served it with rice and Mexican style frozen veggies that I steamed. I will definitely be making this one again.

Fiesta Chicken Enchilada

Prep Time: 15 min Total Time: 35 min

Makes:
4 servings, two enchiladas each

1 small onion, chopped

1 clove garlic, minced

4 cooked small chicken breasts (about 1 lb.), shredded (I used the white meat from a rotisserie chicken ~4cups. It was so easy to shred and doing this step the day before made for a quick dinner).

1 cup Thick 'N Chunky Salsa, divided

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed (I didn't read the recipe too well when I made it and used all of the cream cheese, although I used the 1/3 less fat)

1 Tbsp. chopped cilantro (I left this out because I'm not a big fan of cilantro)

1 tsp. ground cumin

1 cup KRAFT Shredded Cheddar & Monterey Jack Cheese, divided (I used the Mexican 4 cheese).

8 Flour Tortillas

PREHEAT oven to 350°F. Heat large skillet spayed with cooking spray on medium heat. Add onions and garlic; cook and stir 2 min. Add chicken, 1/4 cup of the salsa, cream cheese, cilantro and cumin; mix well. Cook until heated through, stirring occasionally. Add 1/2 cup of the shredded cheese; mix well.

SPOON about 1/3 cup of the chicken mixture onto each tortilla; roll up. Place, seam-side down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining 3/4 cup salsa and remaining 1/2 cup shredded cheese.

BAKE 15 to 20 min. or until heated through.

So Spencer is now cutting his 4th tooth. He has his two middle bottom teeth and now the the teeth to the right and to the left of the middle top. Mason cut those same top teeth, too, before the middle ones. Kinda silly.
Any how, I was able to get a pretty good picture of his bottom teeth as he gnawed on a piece of cold celery. So cute.

Catching Up

Well, we're all feeling better now. We enjoyed a BEAUTIFUL weekend. It was quite warm, but it was nice to be outside.


This was our anniversary gift to each other, a new storm door. It was a pain in the butt to put together, but the end product is great.

Spencer is doing great. He loves everything that we have introduced to him: green beans, carrots, squash, peas, sweet potatoes, applesauce, bananas, and even the little Gerber puffs. He has his two bottom middle teeth. He is sitting up by himself. He loves to play with his toys: especially his Leapfrog drum, the star stacker, and the Leapfrog basketball hoop. He is sleeping well at night and taking a great morning nap and two shorter naps in the afternoon and early evening. He has also started having a little stranger anxiety. He doesn't like when Mommy leaves the room or if someone else is holding him (except for Daddy and Mason).

Mason has been working really hard on staying in his bed all night. We finally bribed him with more GeoTrax if he can stay in his bed for 7 nights in a row. He's doing good, only 2 more nights to go. He is also loving being outside. It was so hot on Sunday that we let him run through the sprinkler. He had a ball (and that water was freezing). He continues to make us laugh with the things he says. Here are a few of our favorites:

We've had enough of these cute little bunnies eating all of our new bushes and flowers, so we purchased a HAVAHART cage and caught one the first night. Mason was sad that we had to take it away. I think he was hoping he could keep it as a pet.

It's going to be a busy month. We have a lot going on.

Feeling a bit under the weather

Unfortunately, the flu is making it's rounds in our house. It started with Mason 2 weeks ago. He had a terrible cough, fever, runny nose, and ear infection. Then a week later Spencer started coughing. He had lots of congestion, a fever, and a double ear infection. I guess, it was inevitable that I too would get sick. I started feeling bad on Tuesday. I had a fever, the chills, lots of aches, and congestion. My throat and ears are still bothering me some, but I did manage to get a descent night sleep last night.
Unfortunately, I missed my girlfriends reunion last Sunday. It was a bummer. I was really looking forward to seeing my grade school/high school friends. But as parents, we make sacrifices. When you have a sick child, you have to look at what's best for them and the people you are going to be around. I would have felt terrible if I would have gone and exposed them all to whatever this is that we have all had.
I'll post later this weekend with the few pictures that I did take this week.

5 Months Old

It's very hard to believe that Spencer is already 5 months old. How is that possible? I remember telling him the day he was born that I wanted him to stay my little baby forever and here is growing up way too fast. He is just about sitting all by himself (unassisted without falling over for about 20 seconds, he cut his first tooth yesterday and I think another will pop through anytime, he has put himself on a good schedule ~naps for 2 hours in the morning and about 1 1/2 hours in the afternoon, he is eating cereal and vegetables, and now the baby hair that fell out is being replaced with soft blond hair). Before I know it, he'll be off to Kindergarten.

Mason is also growing up too fast. He is fully potty trained, including through the night, he gets himself dressed, puts on his own shoes, and using big words. One of his favorite shows is Word Girl. On one episode the word was 'sweltering.' Today I said that I was hot and he asked if I was 'sweltering.' I am blown away when he uses big words and in the right context. I guess all of the TV watching this winter has it's benefits.

Anyhow, enough boasting about my kids. I just like to put these things down, so I'll remember them down the road.

What a week!

It's seems like a lot went on this week. Tim had to work a lot, so the days were long for us. We managed to keep ourselves busy. Spencer has been introduced to both green beans and carrots. He absolutely LOVES the carrots.

He really likes to eat like a BIG boy, so much for him staying my "little baby." Tuesday evening, we went over to Elizabeth's house for dinner. Her Tim is out of town and my Tim was working late. Our kids (these are the kids you see every other week from our play dates) really enjoy playing with one another and we enjoy each other's company.

Oh yeah, before we headed over there, we watched 4 fire engines, 2 ambulances, and 4 police cars drive into our neighborhood and stop a few houses down the street. There was a house fire. From our back yard, you could see flames coming out of a window and from the front you could see lots of black smoke. I don't think anyone was home, but not quite sure.

Today, we had our biweekly play date. This week, my cousin hosted. Let me just say, she is quite creative when planning for our "older" kids to be at her house. This week's theme, BUGS. She had coloring pages with pictures of bugs, some pictures of ladybugs that she had us hide around the family room for the kids to find, and then there was the food (butterfly shaped PBJ, apple ladybugs, peanut butter bees, jello with gummy worms, dirt pudding, and more). SOOO VERY CUTE! She is a great host. Her little guy is blessed to have such a great MOM.



Anyhow, the week is coming to an end. We are looking forward to seeing all of my girlfriends over Memorial Day Weekend and Tim having some extra time off. Enjoy the pictures. I have a couple of new favorites. I think, I'm getting pretty good in manual mode.

HAPPY MOTHER'S DAY! Hope all of you Moms had a great day. My boys were good to me today. I was able to sleep in and breakfast was made for me (french toast, bacon, apple slices, a glass of OJ and a cup of coffee). That was probably the best gift, although, they did get me some flowers and a car charger for my cell phone (very practical since I seem to forget to recharge my phone daily, now no worries). Even though it was rainy and windy, it was a beautiful day!
